Waking up to Morning Gory Muffins is waking up to a a power breakfast, This muffin recipe is loaded with super healthy nutrition, protein and energy, and contains no sugar & no oil, but it's still moist and delicious. Why? Because I used applesauce, honey, and non-fat Greek yogurt in place of the fat and sugar.

Seeds are a very important part of a healthy diet, and we tend to overlook them and miss out on their nutrition power.  Several types of seeds are easy for us to get; sunflower, chia, sesame, hemp, and flax. (make sure that your flax seed is ground and not whole, to get the health benefits, because our bodies do not absorb the nutrients from the whole flax seed) Also, look for raw seeds that are unprocessed.

All of the seeds are rich in fibre, antioxidants, & protein. In this recipe, I'm also using raw local walnuts which are rich in omega & heart healthy fats, plus dried cranberries and raisins,  which  add  concentrated sources of nutrients and natural sweetness.

Make a batch or two of these, and put in freezer bags  for a grab & go breakfast that will keep you ( & your family) going until lunchtime!

Morning Glory Muffins

Ingredients

  • Preheat oven to 350 degrees
  • If not using non stick muffin pans, line 18 muffin holes with baking cups (I told you, no oil)
  • On a baking sheet, spread coconut, sunflower  & pumpkin seeds, and put in oven to toast for five minutes
  • Put ground flax seed in water or juice and let sit to thicken
  • In a large bowl combine flour, baking soda, baking powder, salt, spices, walnuts, cranberries, raisins, coconut, and seeds
  • In another bowl, beat eggs and add yogurt, apple sauce, grated carrot, flax seed mixture and vanilla, mixing well
  • Pour the egg mixture into the dry ingredients and mix just until combined. The batter will be thick.
  • Fill  one and a half non stick muffin tins (18 holes)
  • Bake for 20 minutes or until a toothpick inserted into the centre comes out clean.
